Easy Lime Curd Cake Filling

Tip: Add a drop of green food colour to make the lime curd a more vivid green colour if that is what your final product calls for.

Ingredients
  

  • 3 Limes
  • 100g Sugar
  • 50g Unsalted Butter
  • 2 Large Eggs Beaten
  • Pinch Salt

Equipment

  • Zester or cheese grater
  • Blender optional
  • Medium Saucepan
  • Heatproof bowl
  • Heatproof whisk

Method
 

  1. Boil a small amount of water in a medium sized saucepan.
  2. Juice and Zest 3 Limes
  3. Blend together Pinch Salt, 100g Sugar and Lime Zest
  4. Add blended sugar mixture, Juice of 3 limes, 50g Unsalted Butter and 2 Large Eggs to a heatproof bowl over the saucepan of simmering water.
  5. Slowly whisk the mixture as it melts and combines
  6. Continue to stir over the heat until the mixture thickens. When the curd is thick and creamy and coats the back of a spoon it is ready
  7. Pour into a clean container and leave to cool completely before covering and refrigerating.
